Today, we went out to a village several hours from Hanoi to visit some MCC projects. We talked with some women from a local women's union and saw a daycare. We walked several miles into the countryside to see an irrigation project ( for the gorgeous rice field behind me). We were in a home and talked with the family about the local micro-loan project which they used to raise chickens.
But the highlight was lunch. It was ordered ahead of time from a local restaurant serving local foods. The spread was beautiful. We wrapped veggies and meat in rice paper to dip in sauces. The meat in our wraps yesterday was goat and we weren't sure what it was today. I think it was beef. There were fried eggs, a frog dish, fried tofu, "running chicken", greens soup, and more.
I also have now tried crispy, garlicky locusts. Not a bad flavor, but the legs kind of made me . . . let's say a bit squeamish -- but I tried it.
